How to prepare a fabulous Matelas Poché au Beurre Blanc


Buy a fresh eiderdown mattress at your favorite retailer and let air for at least three hours.

Prepare a Beurre Blanc  by sautéing finely chopped shallots until translucent. Put into a  in a bain marie, add some white wine and let simmer until reduced. Whisk in cold butter until creamy.

Bring at least 10 l of water to simmer and add a pinch of salt. Add the mattress for about 20 min and stir occasionally. Let mattress drip down and serve immediately with the Beurre Blanc.

A Moselle Riesling goes nicely with this!

    Dear Revered Chef,

    tried this one on the double – however I found the mattress to be a bit on the chewy side after only 20 min of simmering …

    Will try 30 min next time!

    • Dear Freddie,

      I suspect your mattress was not of the specified eiderdown quality – most probably you have been coaxed into buying an innerspring mattress.
      With an eiderdown mattress 20 min of simmering should be more than enough.
      Better check the mattress quality offered by your favorite retailer before buying!

    may I suggest to have le Pinot Gris d’Alsace avec les Matelas? Eet is bien meilleur!
